This pizza is the perfect meal when time is tight but you want something tasty. It can be made in the time it takes to ring the takeaway, so put down the phone and get the oven on. It tastes ten times better than a take out and is most definitely a healthier option.
If you’ve got little helpers get them involved too. Arch would have got stuck in if he wasn’t feeling poorly sat on the sofa watching Paw Patrol on repeat. Thank god for kids TV when they’re sick.
Preheat your oven to 230C
For the base, blend together
2tbsp of chopped tomatoes
half an onion
a squidge of tomato puree
a squirt of tomato ketchup
a few splashes of Tabasco if you can take the spice (I added mine after as Arch was eating this too)
a sprinkle of Oregano
salt and pepper
Wizz together in a processor until pureed.
Line a baking tray with baking paper and spread the puree on to a tortilla wrap.
I fried some bacon until crispy for the topping but you can use whatever needs using up in the fridge.
I used the fried bacon, cheddar and mushroom and lots of fresh Basil to give it an authentic Italian taste.
Basil plants are usually less than a pound from the supermarket and add Italian oomph better than anything else. If put in a sunny windowsill and only watered when wilted they last for weeks.
Pop it in the oven for 5 minutes at 230C. Keep an eye on it though as it really doesn’t take long to go from perfect to burnt.
That’s just enough time to decide what you’re drinking with it…….
